Masato Shimizu trained in New York before bringing his counter to a quiet lane off Soi 31, and the result is one of the hardest reservations in the city. Fish comes from Tokyo’s Toyosu market, the rice is warm and loosely packed, and the omakase moves at the chef’s pace.
It has held a Michelin star since 2021 and earns it without spectacle, just precise work and a meal people plan a trip around.
