Gaggan Anand cooks a long, theatrical, emoji-menu tasting built on Indian flavours and very little restraint, and the result has topped Asia’s 50 Best Restaurants and carried Michelin stars. It is loud, funny and technically dazzling in a way few kitchens anywhere manage.
