The Bangkok outpost of Colombo’s celebrated Ministry of Crab is built around enormous mud crabs, priced by size and cooked simply so the shellfish does the talking. Garlic chilli crab, pepper crab and prawns the length of your hand are the order of the day.
It is a hands-on, bib-on kind of dinner. Go with a group, order a crab a size up from what feels sensible, and share.
